Abstract: The webinar illustrates the use of metal oxide (MOX) sensors for the detection of volatile organic compounds (VOCs) in the agri-food sector, as a complement to traditional analytical techniques. Through several case studies, the application of the device for monitoring food quality, storage, and production processes is presented. The results highlight the ability of MOX sensors, supported by multivariate analysis, to effectively discriminate among different experimental conditions. The proposed approach represents a rapid, sustainable, and promising solution for quality control and food safety
