Abstract: Plants are natural sources of a huge variety of specialized metabolites that have a wide range of applications, as for example, in the agro-food, cosmetics, pharmaceutical and biorefinery sectors. The discovery of the genes involved in their biosynthesis provides targets for germplasm screening and crop breeding and for improving the accumulation of valuable compounds. A broad knowledge of the biosynthetic pathways allow also their use in synthetic biology approaches. The presentation will give an overview of our studies in this area, starting from the exploration of the specialised metabolism of Olea europea and moving on to other plant species of interest
